Sweet Pokale Soup!

What happens when you have random things in your fridge? You make soup out of them! My cousin Jocelyne came up with this recipe just trying to make dinner with what she had and it turned out DELICIOUS! And just before soup month is over! So I give you, Sweet Pokale Soup. The best soup you will have this month!

Here is what you will need:

  • 3 large sweet potatoes, peeled and chopped
  • 2 carrots diced
  • ½ bunch kale, leaves only
  • 2 garlic cloves, chopped
  • 4 cups vegetable broth
  • 2 cups water
  • 1 tsp cumin
  • ¼ tsp cayenne pepper
  • ¼ tsp chili powder
  • ¼ cup ricotta cheese
  • 2 tbs. balsamic vinegar
  • Salt and pepper to taste

Start with peeling and chopping the potatoes and carrots.

After everything is good and chopped, add it to the pot with the vegetable stock and water.

 

Now chop up your garlic and measure out your spices! And then toss it into the pan too!

Bring all of it to a boil and let it simmer for 20-30 minutes or until the potatoes and carrots are soft.

Then add your balsamic vinegar.
(P.S. We doubled the recipe, we like food in our family)

Once everything is softened start MASHING! You can also use a food processor. Whatever consistency you would like your soup to be you can do as your heart desires. It really is about the flavor at the end of the day.

Another original recipe by Jocelyne, this one is simple and tasty! It would be perfect for introducing kids to cooking!

You need: bread of your choice, butter and garlic salt!

Cut the bread into little squares. Melt a tablespoon of butter in a pan over medium heat.

Drop a single layer of bread pieces in the pan and sprinkle with garlic salt. Stir and cook until golden brown! (CAUTION: THESE ARE REALLY ADDICTING)

 

Just look at those golden brown nuggets of buttery garlicy heaven…

Okay back to the soup.
Chop up kale and slowly stir it in along with the ricotta cheese. Mash some more if needed.
Garnish with drops of balsamic vinegar and croutons!
